Locals Welcome New Black Forest Retail Outlet

“Its wonderful to be able to supply locals with great quality meats and to be able to do it at a value for money price,” said Richard Deignan, managing Director of Black Forest Smoke House.

The new retail store is part of the AUD $2 million facility the company has opened on Victoria Road, Marrickville.

“We had a retail outlet before but parking was an issue so it didn’t attract many people. We now have plenty of parking and a good street presence so we’re expecting this part of our business to grow.”

Not that retailing is a major part of the Black Forest Smoke House business model at all. The business has established itself as the supplier of delicious gourmet cold meats, sausages, bacons, hams to fine dining restaurants and international hotel chains along the east coast of Australia. A recent contract with the Marriott Hotel Group has taken their reach even further north.

“My ancestors came from Queensland and they began the family tradition of butchery, so its great to be expanding our reach into their old stomping ground,” said Mr. Deignan. It was his great, great grandfather who first began beef farming and butchery upon his arrival from Europe back in 1863.

The family tradition has been maintained ever since and, while it’s developed from being a traditional butchery into small goods, the European traditions remain the same.

“I’m using family recipes for curing meats that have been passed down to me through four generations,” said Mr. Deignan. “It wasn’t until recently, upon the death of my own father and other family members, that I really appreciated the significance of what my family has given me – and the responsibility I have to continue the tradition.”
